What's in Your Cup — Specialty Coffee at Trader & Co.
Every cup of coffee at Trader & Co. starts with a choice — one most cafes don't make.
We roast our own coffee on-site through Six8 Coffee Roasters. That means from the moment the green beans arrive to the moment your flat white hits the table, it hasn't left the building. Fresh roast, dialled-in espresso, no compromises.
What is specialty coffee?
Specialty coffee is the top tier of the coffee supply chain — scored above 80 points by certified tasters, grown with care, and traceable back to the farm it came from. Most commercial coffee doesn't make that cut. Ours does.
What that means for your cup: better flavour, cleaner finish, more complexity. Less bitterness, more depth.
What's a double ristretto?
A ristretto is a short, concentrated espresso shot — less water pulled through the same amount of coffee. The result is sweeter and more intense than a standard espresso. A double ristretto is two of those shots. It's the base of our Magic, and it's why our coffee tastes different to what you might be used to.
What's a Magic?
A Magic is an Australian specialty coffee staple. Double ristretto, a smaller pour of milk, served in a 5oz cup. Less volume, more flavour. If you want to understand what specialty coffee actually tastes like, order one.
The story behind the roast
Six8 Coffee Roasters was started by Daniel and Toni Neuhaus in 2013 — not as a business first, but as a response to what they witnessed while volunteering in Southeast Asia, South America, and Europe. Extreme poverty and human trafficking. They wanted to build something that could fund real change.
Every kilogram of Six8 coffee sold donates $1 to organisations fighting child trafficking and sexual slavery. Over $73,000 raised to date.
The coffee is exceptional because it has to be. You don't build lasting support for a cause by selling something mediocre.
