Hot Cross Buns
Spiced hot cross buns made easy in a bread maker, with sultanas and a shiny sugar-syrup glaze.
Makes 12–15Baking
Ingredients
- 4 cups white stoneground bakers flour*
- 350ml milk*
- 1 egg*, lightly beaten
- 2 tsp yeast or 100ml sourdough starter*
- 3 tbsp panela sugar*
- 1 tsp salt*
- 2 tbsp oil
- 1 cup sultanas*
- 1 tsp cinnamon, ½ tsp nutmeg, ½ tsp cardamom, 1 tsp all spice
Method
- 1Combine all ingredients in the bread maker and start on the dough setting.
- 2When the cycle is complete, roll out onto a clean work bench and divide into 12–15 even-sized sections.
- 3Roll each piece of dough into a ball, tucking it underneath so the top is smooth and tight.
- 4Place into a lined tray, evenly distributed. Cover and leave to rise until nearly doubled in size.
- 5Mix 75g flour and 75ml water together to create a paste and put it in a piping bag. Pipe vertical and horizontal lines over all the buns to form crosses.
- 6Bake in a preheated oven at 180°C for 20 mins.
- 7Remove from the oven and immediately brush with a slightly cooled sugar syrup — made by bringing ½ cup sugar and ¼ cup water to the boil, then letting it cool slightly.
